Southwestern Mango Quinoa Salad

Recipe Ingredients

  • 1 cup Quinoa
  • 1 medium Lime
  • 1 medium Red Bell Pepper, diced
  • 1 small Red Onion, diced
  • 1/4 cup Fresh Cilantro, chopped
  • 2 cloves Garlic, chopped
  • 1 small Jalapeno, seeded and diced
  • 1 cup Frozen Corn, thawed
  • 2 tablespoons Olive Oil
  • 1/4 teaspoon Turmeric
  • 1/4 teaspoon Chili powder
  • 1/4 teaspoon Cumin
  • 1 can Black Beans, 15 ounce size, rinsed
  • 1 large Mango, diced

Instructions

  1. 1. Thoroughly rinse quinoa. Bring two cups water to a boil. Add one cup quinoa and reduce heat to a simmer. Cover and simmer about 15 minutes, until all liquid is absorbed. 2. In a medium bowl combine quinoa, corn, beans, bell pepper, garlic cloves, mango, cilantro, onion and jalapeno. 3. In a small mixing bowl whisk together oil, juice from lime, cumin, chili pepper and turmeric. 4. Drizzle dressing over quinoa mixture and gently stir until well combined. Cover and refrigerate at least 30 minutes and until ready to serve.
