Slow Cooker Beef Curry

Recipe Ingredients

  • 1 pound Red Potatoes, quartered
  • 2 tablespoon Curry powder
  • 1 1/2 teaspoon Cumin
  • 1 tablespoon Ginger, peeled
  • 2 cloves Garlic, grated
  • 2 cans Fire Roasted Tomatoes, Diced
  • 1 cup Fresh Cilantro
  • 1/4 cup Jalapeno
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Brine, from Jalapeno jar
  • 2 slices Naan Bread
  • 2 1/2 pounds Beef Chuck Roast, cubed


  1. 1. Toss the beef and potatoes with the curry powder, 1 tsp of cumin, 1 tbls. ginger, the garlic, 1 tsp. salt and 1 tsp. pepper. 2. Crumble 1/2 slice of naan bread over the beef and potatoes, then pour the in the tomatoes, Cover and cook on low 7 hours or high 4 hours. 3. Uncover and skim off any fat from top of mixture. Stir to combine then let stand 10 minutes. 4. Meanwhile combine the cilantro, pickled jalapeƱo and brine, 1/4 cup water and remaining 1/4 tsp. cumin and 1 tbls. ginger in a food processor. Pulse until combined. Season with salt and pepper to taste. 5. Stir 3 tbls. of cilantro puree into the slow cooker. Serve curry with remaining naan bread and top with cilantro puree.
