Slow Cooker Barbacoa Beef

Recipe Ingredients

  • 4 pounds Chuck Roast
  • 2 tablespoon Vegetable Oil
  • 3 large chipotle peppers in adobo sauce, 3-4 peppers
  • 1 1/4 cups Beef Broth
  • 2 large Garlic Cloves, minced
  • 1 tablespoon Ground Cumin
  • 1 tablespoon Dried Oregano, dried
  • 1/4 teaspoon Ground Cloves
  • 1/4 cup Fresh Lime Juice

Instructions

  1. 1.Cut the beef into large cubes. In a large skillet over medium high heat brown beef cubes in oil. Transfer to slow cooker. 2.In food processor add adobo chilis, beef broth, garlic, cumin, oregano, cloves and lime juice. 3.Pulse until smooth and then pour over meat. Cook on low 8 hours or high 4-6.
