Savory Summer Quinoa Salad

Recipe Ingredients

  • 2 cups Quinoa, cooked
  • 2 cups Cherry Tomatoes, halved
  • 2 cups Spinach Leaves
  • 1 cup Fresh Mozzarella, cut into bite sized pieces
  • 1/4 cup Almonds, crushed
  • 1 cup Asparagus, grilled
  • 2 large Boneless Skinless Chicken Breasts, grilled
  • 1 small Avocado
  • 1/4 cup Greek Yogurt, plain
  • 1/2 cup Water
  • 1 cup Cilantro
  • 1 small Garlic Clove
  • 1/2 teaspoon Salt
  • 1 teaspoon Fresh Lime Juice

Instructions

  1. 1. Combine avocado, yogurt, water, cilantro, garlic, salt and lime juice in food processor. Pulse until smooth. 2.Combine cooked and cooled quinoa, tomatoes, spinach, mozzarella, almonds, asparagus and chicken in bowl. Pour dressing over the top. Mix and enjoy!
