Salmon Patties

Easy and delicious. I like to use this if I have leftover salmon patties, but it also works well with canned salmon.

1 can salmon filet, (or 15 oz fresh salmon, baked or grilled)
2 eggs
5 tablespoons butter, divided
11/2 tablespoons Dry mustard
1 Small onion
3/4 cup butter crackers, crushed
1/4 cup Parsley

Drain salmon, reserving the liquid. Chop onion, crush crackers into crumbs, and beat eggs. Flake salmon. Melt 2 Tablespoons butter into a large skillet over medium-high heat. Cook onion about 5 minutes, or until tender. In medium bowl, combine chopped onions, reserved salmon liquid, 1/3 cup cracker crumbs, eggs, parsley, mustard and salmon. Mix until well blended. Shape into Medium patties (about 5-7 patties) and coat in remaining cracker crumbs. Melt remaining butter in large skillet over medium heat. Cook patties until browned on both sides.
