6 boneless, skinless chicken breasts 11/2 pint sour cream 2 can cream of chicken soup 2 tablespoon poppy seeds 1 cup ritz crackers, crushed 1/3 cup butter, melted
Boil chicken breasts until cooked. Cool and cut into bite-sized pieces. Layer chicken, soup, and sour cream, then Ritz crackers. Drizzle on melted butter. Sprinkle top with poppy seeds. Bake, uncovered, for 30 to 45 minutes at 325 to 350.
We like to turn this into a thicker casserole by adding 4 servings of cooked rice to the pan first.

This recipe is awesome! My husband does not like casseroles, but he loves this one. Add a can of quartered artichoke hearts for added flavor, and it is also very tasty with Cream of Celery soup!
