Pomegranate and Avocado Crostini

Recipe Ingredients

  • 1 small Baguette, thinly sliced
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 large Avocado
  • 1 large Lime
  • 2 large Scallions, sliced
  • 1 dash Salt
  • 1 dash Black Pepper
  • 1/4 cup Feta Cheese
  • 2 tablespoons Pomegranate Seeds

Instructions

  1. 1. Preheat oven to 350. Brush baguette sliced with olive oil and a few pinches of salt. Toast about ten minutes or until golden brown around the edges. 2. Mix together avocado cubes, lime juice, scallions, salt & pepper. Carefully stir in feta and pomegranate seeds. Taste & adjust seasonings. Spoon onto toasted crostini pieces.
