  • 1/4 cup Oil, olive, salad or cooking
  • 200 gm Fresh Lemon Zest
  • 200 gm Fresh Lemon Juice
  • 2 11/17 oz Yogurt, Greek, Non fat
  • 2 tbsp, chopped Shallots, raw
  • 100 gm Brown Sugar
  • 50 gm Dijon Mustard
  • 1/2 tsp Salt, table
  • 100 gm Black Pepper
  • 3 cucumber, (8-1/4") Cucumber, with peel, raw
  • 8 leaves Spearmint, fresh

Instructions

  1. 1. In a bowl whisk together the vinaigrette ingredients. Chill until ready to serve. 2. Pat the cucumber slices dry between paper towels. Combine with the mint in a large bowl. Toss with the vinaigrette and season with additional salt, if desired. Serve chilled.
