Marinated Greek Kabobs

Recipe Ingredients

  • 8 oz Greek Yogurt
  • 1/3 cup Feta Cheese
  • 1 tablespoon Basil
  • 1 tablespoon Sun-Dried Tomatoes
  • 2 tbsp Fresh Lemon Zest
  • 2 tbsp Fresh Lemon Juice
  • 2 tbsp Dried Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Rosemary, Dried
  • 1 pound Boneless Skinless Chicken Breasts
  • 1 large Red Onion
  • 1 large Green Pepper

Instructions

  1. 1. In a large shallow baking dish mix the yogurt, feta, basil, sundried tomatoes, lemon zest, lemon juice, organ, salt and pepper and rosemary. Place chicken in dish and turn to coat. Cover and marinate in fridge for 3 hours. 2. Preheat a grill to high heat. 3. Cut onion into 1 inch wedges. Cut green pepper into 1 1/2 inch pieces. 4. Thread the chicken, onion and pepper alternately onto skewer. Discard remaining yogurt mixture. 5. Grill skewers until the chicken is no longer pink and juices run clear.
