Mango and Avocado Black Rice Salad

Recipe Ingredients

  • 1/2 tsp Salt
  • 1 large Mango, Ripe, diced
  • 1 small Avocado
  • 1/4 cup Almonds, Roasted
  • 1/2 cup Fresh Cilantro
  • 1/2 cup Red Onion, diced
  • 1/4 cup Fresh Lime Juice
  • 1 1/2 tbsp Olive Oil
  • 1 tsp Honey
  • 1/4 tsp Salt
  • 1 clove Garlic Cloves, miced
  • 2 tbsp Cilantro
  • 1 1/2 cups Black Rice

Instructions

  1. 1. Rinse rice in small strainer. Add to 2 3/4 cup water in medium sauce pan. Add pinch of salt and bring to a boil. Cover, reduce heat to low and simmer about 40 minutes. 2. Remove from heat and transfer to a bowl. 3. Meanwhile prepare the dressing. Combine lime juice, olive oil, garlic, honey, cilantro and salt in food processor. Process for 15-30 seconds or until dressing is combined. Stir over slightly cooled rice. Cover and refrigerate about one hour. 4. Before serving toss rice again and add remaining ingredients.
