Honey Lime Chicken Enchiladas

Recipe Ingredients

  • 6 tablespoon Honey
  • 5 tablespoon Lime Juice
  • 1 tablespoon Chili powder
  • 1/2 teaspoon Garlic powder
  • 1 pound Chicken, cooked and shredded (usually 4 chicken breasts)
  • 8 large Tortillas
  • 1 pound Monterey Jack Cheese, shredded
  • 16 ounce Enchilada Sauce
  • 1 cup Cream, heavy cream

Instructions

  1. 1. To make marinade, combine honey, lime juice, chili powder and garlic powder. 2. Whisk the marinade and toss with the shredded chicken in a sealed bag or container. Let it marinate in the fridge for at least 30 minutes, but preferably a half day or so. 3. Pour about 1/2 cup enchilada sauce on the bottom of a 9x13 baking pan. Fill the tortillas with chicken, saving marinade and shredded cheese. Save about 1 cup of cheese to sprinkle on top of the enchiladas. 4. Put the rolled tortillas in the 9x13 pan as you go. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour the sauce on top of the enchiladas. Bake at 350 degrees for 30 minutes or until they are brown and crispy on top.
