Herb Marinated Pork Tenderloins

Recipe Ingredients

  • 1 large Lemon
  • 3/4 cups Fresh Lemon Juice
  • 1/2 cup Olive Oil
  • 2 tbsp Minced Garlic
  • 1 tbsp Thyme, chopped
  • 1 1/2 tbsp Fresh Rosemary
  • 2 tsp Dijon Mustard
  • 2 pounds Pork Tenderloins

Instructions

  1. 1. Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme and mustard in a mixing bowl. Place tenderloin in large ziplock bag and pour marinade inside. Seal and refrigerate at least three hours. 2. Preheat oven to 400 degrees. 3. Remove tenderloin from marinade and sprinkle with salt and pepper. Heat 3 tbls. olive oil in large oven proof saute pan over medium high heat. Sear the tenderloin on all sides until golden brown. 4. Place the saute' pan in the oven and roast for 10 to 15 minutes, until the meat registers 137 degrees at thickest part. Transfer meat to a platter and cover tightly with foil. Allow to rest 10 minutes before serving.
