Green Beans with Bacon Vinaigrette

Recipe Ingredients

  • 2 pounds Green Beans, trimmed
  • 6 slices Bacon
  • 1 large Shallot
  • 2 tbsp Olive Oil
  • 2 tbsp Whole Grain Mustard
  • 2 tbsp Apple Cider Vinegar

Instructions

  1. 1. Boil a large pot of water. Add 1 tbls. salt and add green beans. Cook about five minutes, just until tender. Drain and run under cool water, then transfer to a serving bowl. 2. Meanwhile in a medium skillet cook bacon over medium high heat until crisp. Transfer to a paper towel lined plate. Let cool, then break into pieces. 3. Discard all but 2 tbls. bacon drippings and then return to medium heat. Add the shallots and cook about 1 minute. Stir in vinegar, mustard, oil, dash of salt and pepper and stir to combine well. Pour over green beans and toss to combine.
