  • 3 pound Cross Rib Roast
  • 3 tablespoon Balsamic Vinegar
  • 3 cloves Garlic, minced
  • 2 tablespoon Fresh Thyme
  • 2 tablespoon Rosemary
  • 1 tablespoon Olive Oil


  1. 1. Preheat oven to 450 degrees. Place roast in dutch oven. 2. Spread balsamic vinegar on roast. Make a paste with the olive oil, garlic and fresh herbs. 3. Cook 15 minutes at 450 then reduce heat to 350 and cook another 45.
