Creamy Spring Gnocchi

Recipe Ingredients

  • 1 pound Gnocchi, Potato Gnocchi
  • 1 bunch Asparagus
  • 1/2 cup Green Peas, Frozen
  • 1 cup Ham, Cooked and Diced
  • 4 cloves Garlic Cloves, Minced
  • 2 teaspoon Olive Oil
  • 2 ounces Cream Cheese
  • 3/4 cup Half and Half Cream
  • 1/2 teaspoon Salt, To Taste
  • 1/2 teaspoon Black Pepper, To Taste

Instructions

  1. 1. Heat olive oil in a large skillet over medium heat. Add garlic and ham and saute until ham starts to brown. 2. Add cream cheese and half and half, stirring to melt and combine. 3. Meanwhile bring a large pot of water to a boil. Add gnocchi. After one minute add asparagus and peas. Once the gnocchi are floating to the top, after about 3 minutes, drain all contents into a colander. 4. Add gnocchi and vegetables to the skillet. Toss to coat. Season with salt and pepper. Bring to a simmer and cook for a few minutes until sauce thickens. Top with freshly grated parmesan cheese if desired.
