Creamy Smashed Cauliflower

Recipe Ingredients

  • 1 head Cauliflower, cut into florets
  • 1 tablespoon Olive Oil
  • 1 clove Garlic, smashed
  • 1/4 cup Parmesan
  • 1 tablespoon Cream Cheese
  • 1/2 teaspoon Salt, or to taste
  • 1/2 teaspoon Black Pepper, or to taste

Instructions

  1. Directions 1. Place steamer basket in saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover and steam about ten minutes, until tender. 2. Meanwhile heat olive oil in a small skillet over medium high heat. Cook and stir garlic until softened, about 2 minutes. Remove from heat. 3. Transfer half the cauliflower to a food processor, cover and blend on high. Add remaining cauliflower florets, a couple at a time until blended and creamy. Blend in oil, parmesan cheese, cream cheese, salt and pepper.
