Creamy Kale and Turkey Penne

Recipe Ingredients

  • 12 oz Penne Noodles
  • 1 tbsp Olive Oil
  • 1 3/4 cups Milk
  • 10 small Sun-Dried Tomatoes in Oil
  • 2 cloves Garlic Cloves, minced
  • 1/2 cup Chicken Broth
  • 1 cup Kale, chopped
  • 2 tbsp Butter
  • 3 tbsp Flour, All Purpose
  • 1/4 cup Heavy Cream
  • 1/3 cup Parmesan, shredded
  • 1 pound Italian seasoned ground turkey

Instructions

  1. 1. Cook pasta according to package directions. 2. Meanwhile in a large skillet heat 1 tbls. olive oil over medium high heat. Add sausage and cook, stirring occasionally until golden brown and cooked through, about five minutes. 3. Pat oil from sundries tomatoes with paper towels and then add into the sausage. Add garlic and sauce about 30 seconds. Add in chicken broth and scrape bottom of pan to deglaze any brown bits. Add kale, cook and toss occasionally until wilted and tender, about five minutes. Season with salt and pepper to taste. 4. While kale is cooking, in a medium saucepan melt butter over medium heat. Add flour and cook stirring constantly 1 minute. While whisking slowly pour in milk and whisk vigorously to smooth lumps. Season with salt and pepper to taste. Cook until mixture thickens. Remove from heat and stir in cream and parmesan cheese. Pour milk mixture into sausage mixture along with pasta and stir to coat. Stir in about 1/2 cup pasta water to reach desired consistency. Serve warm.
