Chipotle Lime Tacos with Strawberry Jalapeno Salsa

Recipe Ingredients

  • 2 tablespoons Olive Oil
  • 2 Boneless Skinless Chicken Breasts, sliced thin
  • 8 ounces Strawberries, diced
  • 1 bunch Green Onion, diced
  • 2 cloves Garlic, diced
  • 1/4 cup Cilantro, chopped
  • 8 Corn Tortillas, cooked
  • 3 Limes, 1 zested
  • 1 cup Cabbage, shredded
  • 1 medium Jalapeno, seeded and diced
  • 1 tablespoon Adobo Sauce

Instructions

  1. To Make Salsa: Place strawberries in a bowl and mash slightly to release juices. Add onion, peppers, cilantro and juice from 1 lime. Mix well, cover and place in fridge so flavors can marry well. To Make Marinade: In a small bowl whisk together the lime juice from remaining two limes, lime zest from one lime, olive oil, garlic, adobo sauce, garlic and a dash of salt and pepper. Place meat in a large ziploc bag or a glass dish and cover with marinade. Cover dish or seal bag and place in fridge for at least 30 minutes. 3. Heat grill or skillet over medium-high heat. Spray with olive oil. Grill chicken about 6 minutes per side until cooked through. Place on a plate and let cool slightly. Slice into bite size pieces. 4. To serve: Heat corn tortillas. Add chicken, cabbage and then top with salsa. Serve with sliced lime wedges.
