Recipe Ingredients

  • 8 large Lasagna Noodles, 4x4 or 3x6
  • 1 pound Chicken Breast, bonesless, skinless
  • 3/4 cup Ricotta Cheese, part skim
  • 3/4 cup Cauliflower, pureed
  • 1/4 cup Parmesan, grated
  • 1 teaspoon Garlic powder
  • 1/4 teaspoon Salt
  • 2 cups Tomato Sauce
  • 1 cup Mozzarella Cheese, shredded

Instructions

  1. 1. Boil and salt water for lasagna sheets. Cook, drain and then place the lasagna in a bowl of cool water. 2. Heat oven to 350. Coat 9x12 pan with cooking spray. 3. Mix chicken, ricotta, cauliflower puree, parmesan, garlic powder, and salt until the chicken is well coated. 4. Place 1 lasagna sheet on cutting board. On the edge closest to you, spread out 1/4 cup of the filling so it covers a third of the sheet. With your fingertips, roll the lasagna into a tube. 5. Transfer seam-side down to the baking dish. Repeat. 6. Pour the sauce around the cannelloni but not on top. Sprinkle with mozzarella and bake, uncovered, 25-30 minutes.
