Cheesy Sausage and Pumpkin Quesadilla

Recipe Ingredients

  • 1/2 pound Sausage, ground
  • 1 large Shallot, minced
  • 1 clove Garlic, minced
  • 1 tablespoon Olive Oil
  • 1 cup Chicken Stock
  • 1 can canned pumpkin
  • 3 leaves Sage Leaves, roughly chopped
  • 1 tablespoon Rosemary, chopped
  • 1 tablespoon Thyme
  • 1 large Egg
  • 1/2 cup Cream
  • 3/4 cup Mozzarella Cheese, grated
  • 8 large Flour Tortillas
  • 1/2 cup Gruyere Cheese, grated

Instructions

  1. 1. In a large skillet cook sausage until browned and cooked through. 2. In a medium bowl combine pumpkin, cream, sage leaves, rosemary, thyme, egg, Gruyere and a little salt and pepper. Stir to combine. 3. Heat olive oil in a medium skillet over medium high heat. Add shallots and garlic. Cook for about 3 minutes, stirring often, until shallots are softened. 4. Add pumpkin mixture to skillet. Gradually stir in chicken stock. Add more stock if sauce is too thick. 5. To make the quesadillas, spread some of the pumpkin mixture onto tortilla then top with sausage. Fold other half of tortilla on top and place in a panini maker or in a dry skillet over high heat. Cook until golden brown and cheese is melted. Garnish with fresh sage to serve.
