Recipe Ingredients

  • 2 tbsp Vegetable Oil
  • 2 large Eggs
  • 1 cups Scallions, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Ginger, Chopped
  • 1 head Cauliflower, about 2 pounds
  • 4 tbsp Soy Sauce
  • 1/4 tsp Red Pepper Flakes
  • 1 tsp Sugar
  • 1/2 cup Frozen Peas
  • 1/2 cup Carrots, frozen
  • 1 tsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1/4 cup Peanuts, chopped


  1. 1. Grate cauliflower in a food processor using grating disc. Set aside. 2. Heat 2 teaspoons of vegetable oil in a large nonstick skillet over medium heat. Add the eggs and a pinch of salt and scramble until eggs are cooked. Transfer to a small plate and set aside. Wipe the pan clean. 3. Add 3 tablespoons oil to the pan and heat over medium high heat. Add the white parts of scallions, garlic and ginger and cook, stirring often, until softened but not browned, about 3 minutes. 4. Add the grated cauliflower, soy sauce, red pepper flakes, sugar and a pinch of salt. Cook about 3 minutes, stirring often. 5. Add the vegetables and cook another 4-5 minutes until everything is heated through and tender-crisp. Stir in rice vinegar, sesame oil, dark green parts of scallions, peanuts and eggs. 6. Serve hot.
