Braised Chicken with Asparagus and Mushrooms

Recipe Ingredients

  • 2 pounds Chicken Breasts, 2-3 breats
  • 1 pound Asparagus
  • 1/2 pound Mushrooms
  • 2 cups Chicken Broth
  • 1 1/2 tbsp Wheat Flour
  • 2 tsp White Wine Vinegar
  • 1/2 tsp Salt
  • 2 tsp Dijon Mustard
  • 1/4 cup Parsley, chopped
  • 1/4 cup Dill, chopped

Instructions

  1. 1. Cut each chicken breast in half width wise then into equal pieces about the size of your fist. 2. Preheat large skillet on medium heat and spray with cooking spray. In 2 batches brown chicken for 5 minutes on each side. Keep browned chicken on a platter under foil while cooking the rest. Set aside. 3.In a bowl whisk together chicken broth, flour, vinegar, salt and mustard. Add to the same skillet and cook for 2-3 minutes or until the sauce thickens a bit. 4.Trim the tough ends of asparagus and cut into 2 inch pieces. Add mushrooms and asparagus to the sauce. Cook for 3-5 minutes. Add chicken to the skillet among the mushrooms and asparagus and sauce. Cook for another 3-5 minutes. Add herbs. Serve warm.
