Braised Chicken Thighs with Button Mushrooms

Recipe Ingredients

  • 1 tbsp Olive Oil
  • 6 large Chicken Thighs
  • 2 tbsp Butter
  • 1 small Yellow Onion
  • 1 clove Garlic, minced
  • 2 tbsp Flour
  • 2 tbsp Tomato Paste
  • 2 cups Chicken Stock
  • 2 tbsp Rosemary, chopped
  • 2 tbsp Fresh Parsley Leaves, chopped
  • 4 cups White Rice
  • 2 1/2 tbsp Paprika
  • 2 tbsp Salt
  • 2 tbsp Garlic powder
  • 1 tbsp Black Pepper
  • 1 tbsp Onion powder
  • 1 tbsp Cayenne Pepper
  • 1 tbsp Dried Oregano
  • 1 tbsp Dried Thyme
  • 1 pound Button Mushrooms, thinly sliced

Instructions

  1. 1. In a small bowl mix together the garlic powder, black pepper, onion powder, cayenne, dried oregano and thyme. Season chicken thighs with mixture. 2. Heat oil in a large skillet over medium high heat. Place the chicken in the pan and sear until golden brown, about 3 to 4 minutes per side. Remove chicken from pan and add the butter and mushrooms. Saute' the mushrooms, stirring occasionally until browned and most of the liquid has evaporated, about five minutes. 3. Add the onions and garlic to the pan and saute' for 3 to 4 minutes. Sprinkle the flour into the pan and cook, stirring to make a roux, about 5 minutes. Add the tomato paste, stock and rosemary to the pan, bring to a boil ad reduce to a simmer. Return the chicken to the pan and cook in liquid for about 30 minutes until cooked through and tender. 4. Serve over steamed rice and topped with freshly chopped parsley.
