Blue Cheese Potato Salad

Recipe Ingredients

  • 3 slices Bacon
  • 1 1/2 ounces Blue Cheese Crumbles
  • 1 bunch Green Onions, chopped
  • 1/2 cup Olive Oil
  • 2 pounds Red Potatoes
  • 3 tablespoons White Distilled Vinegar

Instructions

  1. Brown bacon over medium heat in frying pan. Drain, crumble and set aside. Boil potatoes until tender, about 15 minutes. When cool, chop leaving skins on. Whisk together oil, vinegar, green onions, salt and pepper to taste. Add potatoes, bacon and cheese and toss together.
