Blackberry and Peach Salad with Grilled Chicken

Recipe Ingredients

  • 4 tablespoon White Wine Vinegar
  • 2 tablespoon Extra Virgin Olive Oil
  • 2 sprig Fresh Thyme
  • 2 small Boneless Skinless Chicken Breasts
  • 1 small Shallot
  • 4 cups Mixed Greens
  • 2 large Peaches, pitted and sliced
  • 1 cup Black Berries
  • 1/2 cups Blue Cheese
  • 2 tablespoon Honey
  • 1/2 cup Hazelnuts

Instructions

  1. 1. Roast hazelnuts in a small skillet over low heat about 4 minutes until toasted and fragrant. 2. In a bowl, combine 2 tbsp vinegar, 2 tbsp olive oil, 1 tbsp honey, the thyme and 1/2 tsp sea salt. Add the chicken and turn to coat. Cover and refrigerate 2 to 4 hours. 3. Preheat a grill pan and grill the chicken until browned, about 5 minutes each side. Transfer the chicken to a cutting board and slice. 4. To prepare your dressing, combine the remaining 2 tbsp white wine vinegar, 1 tbsp honey and 1/2 tsp sea salt. Gradually whisk in your olive oil to taste. Stir in the minced shallot. 5. Mix your green leaves, sliced peaches, blackberries and sliced chicken. Pour dressing over salad mixture and toss to combine. 6. Sprinkle the salad with the hazelnuts and cheese just before serving.
