Baked Pasta with Vegetables

Recipe Ingredients

  • 1 pound Rigatoni Pasta
  • 1 pound Ground Beef, extra lean
  • 3 large Zucchini, chopped into large pieces
  • 1 jar Spaghetti Sauce
  • 1/2 cup Parmesan, shredded
  • 1 bag Spinach

Instructions

  1. 1. In a large pot bring water to a rolling boil. Add pasta and cook about 12 minutes. 2. Meanwhile brown ground beef, drain grease. Add diced zucchini and cook for a few minutes until just tender. Add bag of spinach, toss until greens are wilted. 3. Add jar of spaghetti sauce and beef/zucchini squash to pasta. Toss to combine. 4. Put in baking dish and bake at 350 for 20-30 minutes. 5. Top with parmesan cheese.
