Anyone with a family member with food allergies knows that food allergies are more than a mere inconvenience. Egg allergies can be especially difficult to work around. Here are a few egg replacers that you can substitute for the real thing. Just try to remember to match the flavor of the egg substitute to what you are baking. Some recipes may require a little trial and error, but you'll soon catch on quickly to what works.

1 large egg OR 1/2 cup banana puree
1 large egg OR 1/4 cup sweetened applesauce
1 large egg OR 1/4 cup prune puree (works well with chocolate and carob)
1 large egg OR 1/4 cup pureed peaches
1 large egg OR 2 tablespoons silken tofu
